How do I fix striped spark plug threads?

Simply re-tapping the same thread will not fix the problem. The damaged thread has been "stripped" away! To re-tap, you will have to tap a larger thread and will no longer be able to use the same spark plugs, but will have to fit bigger ones. Not advisable.
Best option, replace the head.
Next option, ask a professional if they can fit a heli-coil.
Remember this experience and the price to fix it. Do not over tighten spark plugs.
