Picky are we, Whats your choice vegetable?
Ole Wooly loves a good soup, even in summer a lite soup can be wonderful!
Parsley, parsnip and celery root are great as salad ingredients or toppers, how many know they make tasty soups?
What are your suggestions or favorites?
love watercress salad. Chopped up with a little onion and mixed with cottage cheese makes a great sandwich.
Favorite soup:
Start with a roux (1/2 stick of Butter and 2 tablespoons of flour)
Stir fry in the roux: 1 diced onion, roasted garlic and 2 celery stalks cut really small
Add:
2 small potatoes diced
1/2 pkg (5oz) thawed spinach
Couple handful of broccoli florets thawed
4 small carrots diced
1/4 teaspoon dry Rosemary
1 Bay Leaf (make sure to throw it out after cooking is done- can cut one's insides)
1/2 teaspoon of a good Creole Seasoning (we like Tony Cachere's)
1 tablespoon of Soy sauce
Salt & pepper to taste
2 cans of beef, vegetable or chicken broth
Water to desired volume
Bring to boil and simmer for 20 minutes.
Now you can chose to add shell noodles (partially cooked separate to remove the starch) or add brown rice.
Add plenty of pieces of grilled chicken or smoked ham or grilled beef, bite size.
Simmer another 20 minutes until the rice or noodles are cooked.
Drizzle good extra virgin olive oil and sprinkle with chopped parsely. Serve with crackers or toasted french bread.
